Set
timer for 30 minutes to begin. |

30 MINUTES BEFORE DINNER, make the vinaigrette. In the bottom of a large
salad bowl, stir together 1 T blue cheese crumbles, 1 T bacon pieces, 3⁄4 c
zesty Italian salad dressing, and 1 T Splenda granular until well mixed. Cover
and keep in the refrigerator. |

26 MINUTES BEFORE DINNER, in a 12-inch nonstick saucepan put, bring 1
can beef broth to a boil over medium heat. Chop 1 medium onion into bitesize
pieces, set aside. In a separate 12-inch nonstick skillet melt the 1⁄2 T butter
over medium heat. |

23 MINUTES BEFORE DINNER, add the chopped onion to the melted butter
and cook for 10 minutes, or until tender. |

20 MINUTES BEFORE DINNER, add the 1 1⁄2 c uncooked elbow macaroni pasta
to the boiling beef broth. Cover and cook 10 minutes, stirring occasionally. |

18 MINUTES BEFORE DINNER, cut the 3⁄4 lb sliced roast beef into bite-size
pieces; set aside. |

13 MINUTES BEFORE DINNER, remove the cooked onion from the burner.
Set aside 1⁄4 c of the onion to use later. |

10 MINUTES BEFORE DINNER, add the roast beef and the remaining onion
to the skillet of cooked macaroni mix well. Reduce the heat to low and cover.
Cook for 5 minutes, or until the roast beef is warm. |

5 MINUTES BEFORE DINNER, turn off the burner under the casserole and
sprinkle the top of the casserole with 1⁄2 c mozzarella cheese. Spray with cooking
spray to help it melt better. Cover and let sit until time for dinner. |

Thinly slice 1 c fresh strawberries. Set aside 10 slices of strawberries to
use as garnish. |

2 MINUTES BEFORE DINNER, retrieve the salad dressing from the refrigerator.
Using a large spatula, gently stir in the remaining fresh strawberry slices,
1 bag prewashed fresh baby spinach, and 1⁄2 c Italian croutons until the salad
is well coated with the dressing.* |

Arrange the reserved 12 slices of strawberries on top of the salad and
sprinkle the top of the salad with 1 T blue cheese crumbles and 1 T
30%-lessfat real bacon pieces. |

1 MINUTE BEFORE DINNER, put the skillet with the casserole in it on a hot
pad and place on the dinner table. Place the salad on the table and serve dinner
immediately. |

NOTE: Only stir the salad dressing into the spinach just before you are ready to
serve dinner. Otherwise, if you do it too soon before eating, the salad will
wilt and/or become soggy. |
