Cherry Trifle
This is one of my all-time favorite desserts

cup confectioners' sugar

1/4

cup chopped pecans or walnuts
1 (8-ounce) package fat-free cream cheese, softened 5 cups cubed angel food cake
1 (8-ounce) container fat-free whipped topping, thawed 1 can lite cherry pie filling

Beat the confectioners' sugar and cream cheese together in a mixing bowl.
Stir in the whipped topping and chopped nuts.
Stir in the angel food cake.
Alternate layers of cake mixture and pie filling in a glass bowl until all ingredients are used.
Chill for at least 3 hours before serving.
Refrigerate unused portions.
Yield: 15 servings

No-Bake Eclair Cake
I like this best when prepared two or three days before eating.

envelopes Dream Whip

 

Whole graham crackers
2 (3.4-ounce) boxes of French vanilla pudding mix 1/2 (11-ounce) jar fat-free hot fudge

Prepare the Dream Whip and the pudding according to package directions.
Refrigerate for 5 minutes.
Line the bottom of a 9 x 13-inch baking pan with 7-1/2 graham crackers.
Combine the Dream Whip and pudding in a bowl; mix until well blended.
Spoon half of the pudding mixture over the graham crackers.
Add another layer of graham crackers.
Spoon the remaining pudding mixture evenly over the graham crackers.
Add another layer of graham crackers.
Microwave the hot fudge for 10 to 15 seconds or until of spreading consistency.
Spread the hot fudge over the dessert and refrigerate until ready to serve.
Refrigerate unused portions.
Yield: 15 servings
