Festive Cranberry Pineapple Salad
This is one of my all-time favorite Christmas salads. I grew up loving this one as a child. Mom used to make it high fat. I love it low fat, and it is every bit as good.

12

ounces fresh cranberries

1

20-ounce can crushed pineapple, drained
2 cups miniature marshmallows 1 8-ounce carton fat-free whipped topping, thawed
1/2 cup Splenda granular (or 1/2 cup sugar) 1/4 cup chopped walnuts (optional)

Process the cranberries in a food processor for 1 minute.
Pour the purée into a large bowl.
Stir in the pineapple, marshmallows, whipped topping, Splenda, and walnuts.
Chill in the refrigerator for at least 6 hours. (The longer it chills, the better it tastes.)

Menu idea: For a terrific Christmas menu, serve this salad with Christmas Punch (page 262), Creamed Green Geans (page 111), Sensational Sweet Potato Casserole (page 123), all from Busy People's Low-Fat Cookbook, and Pork Holiday Barbeque (page 132), from Busy People's Slow Cooker Cookbook.

How can we hope for greater gifts and talents from God
if we don't even use the ones we have?
